Besan Barfi Recipe: Preparation Method
1. Roast the Besan: Heat ghee in a heavy-bottomed pan over medium flame. Add the gram flour and roast it, stirring continuously, for about 10–12 minutes. The besan should turn golden brown and release a nutty aroma.
2. Add Milk: Lower the flame and gradually add milk to the roasted besan. Mix thoroughly to avoid lumps. Cook for 2–3 minutes, stirring continuously, until the mixture thickens.
3. Add Sugar: Add sugar to the mixture and keep stirring until the sugar dissolves completely. Continue cooking until the mixture thickens further and starts coming together.
4. Enhance with Spices: Mix in crushed cardamom and nutmeg powder. Cook until the mixture begins to leave the sides of the pan, indicating it is ready.
5. Set the Barfi: Grease a plate or tray with ghee. Pour the mixture into the greased plate and spread it evenly.
6. Add the Final Touch: Garnish with chopped almonds and pistachios, pressing them lightly into the surface.
7. Cool and Cut: Allow the mixture to cool for about 20 minutes. Once set, cut it into your desired shapes.
