With the rain blessing us now and then and the festive season gripping the soul of the city here is a recipe of Bhuni Khichuri by the famous Chef Rongon Neogi to relish and enjoy the festive together.
BHUNI KHICHURI
Moong Dal – 500 gms
Gobinda Bhog Rice – 500 gms
Cauliflower – few florets
Tomato – 1 pc cut into quarters
Green Peas – 100 gms
Green chillies – 4 pcs
Ginger 3/4 tsp cut into julienne.
Bay leaf – 2 pcs
Sugar – to taste
Salt – to taste
Turmeric 1 tsp
Kismis (Raisins) – as per individual requirement
Deshi Ghee – 200 gms
Method –
Boil moong dal in a Kara. Soak Gobinda Bhog rice in water for ½ hr. Heat Ghee in a handi, add bay leaves & julienned gingers. Add boiled moong dal & rice stir-fry for 5 mins, then add water, turmeric powder, and again bring to boil. Add tomatoes, cauliflower, green peas, kismis, and green chillies. Add salt & sugar and mix water gradually when needed. Stir continuously & add water when needed. In half an hour the khichuri will be ready. Remove from the flame, add ghee, and serve hot with labra, alu dum, beguni accompanied by jalpai chutney followed by payesh to end the meal in sweet mode.
