Beat the summer evenings with this sweet dish

Hello friends, your chef Ronit once again back with an amazing and tasty recipe. Summers are sultry and eating does not come naturally as the soul simply craves for water based substances.  What if we skip hot beverages and indulge into small servings of sweet dish?  Here, we go a dish made of pumpkin. 

To make Pumpkin Halwa we need –

Pumpkin – 500 gms (peeled and grated)

Milk – 200 ml 

Mawa – 200 gms

Elachi powder – 1 tspn

Ghee – 5 to 6 tspn 

Sugar – as per taste 

Pistachio chopped – for garnish

Method –

Take a ‘Kadhai‘ and add ghee to it followed by grated pumpkin. Cook on medium flame till it releases all the water it contains. 

When the pumpkin is almost cooked add the mawa and cook on slow flame. Stir the mixture well, add milk and then again stir but remember on a medium flame. 

When the texture is right just like halwa turn the flame off and add sugar. Stir for 1 or 2 minutes and keep it aside. 

Serve hot or cold but garnish with chopped pistachio or any dry fruits you prefer. 

Remember patience is the key.
