A tasty, delicious, and healthy one-pot meal perfect for brunch or drunch. Inspired by Bhutan’s national dish “Ema Datshi” (chili pepper cheese stew served with rice), this version includes shrimp and rice for added flavor, health benefits, and heartiness. “Ema” means chili, and “Datshi” means cheese in Bhutanese. This stewed rice dish is a flavorful twist on the traditional recipe, incorporating the richness of cheese with the delightful taste of shrimp and a variety of colorful bell peppers. The addition of rice makes it a complete and satisfying meal that’s sure to please your taste buds and nourish your body.
Ingredients (Serves 2):
- 1 red bell pepper, sliced lengthwise
- 1 green bell pepper, sliced lengthwise
- 1 yellow bell pepper, sliced lengthwise
- 1 carrot (optional), sliced
- 2 large onions, diced
- 1 whole garlic, peeled and chopped
- 1 tbsp ginger, finely chopped
- 4-6 cheese slices or a block of cheese
- Salt to taste
- Butter or olive oil
- 4-6 tbsp short-grain Shyama rice (little finger millet), washed and soaked [Gobindobhog rice can also be used]
- 10 medium-sized shrimp, mixed with salt
- 1 green chili, deseeded and sliced lengthwise (optional)
Method:
1. Prepare the Ingredients:
- Wash and soak the rice.
- Slice the bell peppers, carrot (if using), and green chili.
- Dice the onions.
- Peel and chop the garlic.
- Finely chop the ginger.
- Mix the shrimp with salt and set aside.

2. Cook the Shrimp:
- Heat a wok and add 1 tbsp of butter and 1 tbsp of olive oil.
- Sauté the shrimp on low flame for 2-3 minutes. Remove from the wok and set aside.
3. Cook the Vegetables and Rice:
- In the same wok, add another tablespoon of butter and olive oil.
- Add chopped garlic, diced onion, and chopped ginger. Sauté until fragrant.
- Add the sliced bell peppers, carrot (if using), and green chili. Stir well.
- Add the soaked rice and mix well with the vegetables.
- Add one cup of water and mix thoroughly.
4. Simmer and Combine:
- Cook the rice and vegetables on medium to low heat until the rice is cooked through.
- Add the cheese and shrimp to the wok.
- Mix well until the cheese starts to melt. Taste and adjust salt if necessary.
5. Serve:
- Garnish with grated cheese before serving.
