Chicken Malai Kofta

Try this amazing Chicken Malai Kofta by Poulomi Ghosh and be the chef of the chefs in your circle…

Ingredients:

For kofta:

1) Chicken Mince – 300gm

2) Chess – 2 slices grated

3) Onion- 1piece (roughly chopped)

4) Garlic – 4 cloves (roughly chopped)

5) Pepper powder-1tsp

6) Green chili- 3 pieces (roughly chopped)

7) Cornflour – 4tbs ( you can add more if required for making the

kofta ball)

8) Salt- as per test

9) Sugar- 2tsp

10) Coriander powder- 1tsp

11 ) Cumin Powder- 1tsp

12)Oil – For deep frying (if u wish u can sauté it also)

For the gravy:-

1 )Gee-2.5tbs

2 ) Oil-2tbs

3)Garlic- 1 & half tbs,

4) Ginger- 1tbs

5)Whole Garam Masala – cinnamon stick (a half-inch), green

cardamom(2 piece), cloves (2 piece),bay leaf(1 leaf)

6) Tomato- 2 medium-sized (sliced)

7) Onion – 2 big (sliced)

8)Coconut milk- 1 cup (60ml)

9) Cashew & melon seed paste-2 tbs

10) Salt- as per test

11) Turmeric powder- 1 & half tsp

12)Red chilli powder- 2tsp

13) Sugar- 2tsp

14)Nutmeg Powder-1/4 tsp

 

Method:

Making of Kofta:

1) Take a pan to add 3 cup water & 2 tsp salt to it

2) Lukewarm the water

3) Add Chicken Mince & cover it

4) Keep it for boiling for at least 7-8 min

5) Drain the water

6) Now take a large bowl & add all ingredients of kofta except

oil

7) Make a semi-smooth (which have very little chunks) dough

8 )Make the round shape ball

9) Keep it in the refrigerator for at least 2-3 hours (you can skip this

step, in that case, make a tight dough)

10) Take a karai and add oil

11) Now add balls in the medium hot oil fry them till they turn golden brown and keep them aside.

 

For gravy:

1) Take a pan & add sliced onion for frying,

2) Fry it till gets nice golden colour and after that keep it aside

3) Make a smooth paste using warm water

4) In another pan add ginger, garlic, tomato, cashew & melon seed and water

5) Bring it to boil,

6) Make a smooth paste of it

7) Now take a pan to add ghee & oil

8) Now add whole garam masala

9) As the matter starts leaving an aroma to add ginger, garlic & tomato paste stir it nicely

10) Now add fried onion paste and keep stirring

11) Add dry powder masala (Turmeric powder, Red chilli

powder)

13) When oil gets separated add Cashew & melon seed paste stir it gently

14) Add sugar & salt

15) Now add coconut milk & nutmeg powder

16) If the gravy is too thick, add some water (or you can

skip it)

17) Now boil it for 3-4 min and turn the gas off

18) Now pour the gravy over the kofta & serve it

19) You can also add some fresh cream on top of it.

It is ready to serve..!!

Have it with parathas or roti.
