CHOCOLATE PAYESH

As the month calls for festivity Soma Chakraborty from Assam gives us a chocolate delight in the form of ‘Chocolate Payesh’…

Ingredients:

Gobindobhog Rice – 1/3 cup (soaked in water for 30 minutes, and then strained)
Double toned milk- 1lt
Chopped Nuts – 1/2 cup (cashew, pistachio, almond, walnut, raisins)
Sugar – 1/2 cup
Cocoa powder – 1 teaspoon
Drinking chocolate/melted chocolate- 2 teaspoon
Bay leaf – 2 medium size
Green Cardamom – 2 crushed

Procedure:

Wash rice and soak it in enough water for 15 minutes and then drain it. Boil milk in a bowl. When the milk starts boiling, add crushed cardamom and bay leaf. Boil the milk well in low flame until it reduces to 1/3 rd. Add the rice to the milk. Let it cook well.  The rice should be cooked well but should not become mushy and should hold its shape. Keep stirring in between to avoid sticking to the bottom of the pan. Once the rice is cooked, add sugar and mix well. Boil for some more time so that the milk thickens. Now add the cocoa powder and drinking chocolate and stir well. Add all the nuts to it and mix well.
Now take a bowl and grease it with drinking or melted chocolate. Pour the payesh to it. Garnish with crunched chocolate, nuts, and raisins.
