Fishes are always tasty, and for the Bengalis, it is a staple diet. Koi Kamala fish recipe is one such recipe that is not just experimental but a treat to the gastronomic lovers. Koi fishes are easily available in the market. Shilpi Mridha, an administrative officer in Eastern Railways, loves to cook and innovate. Here is the recipe Koi Kamala by her.

Ingredients for Koi Kamala Fish recipe:
Koi Fish – 6 medium pcs.
Ginger paste – 1 tbsp
Turmeric powder – 1 tbsp
Sugar – 1/3 teaspoon
Kashmiri Chilli Powder – 1 teaspoon
Chilli paste – 6 pcs
Black Cumin (Kalo Jeera) – 1/2 teaspoon
Minched Coriander leaves (Dhania Patta) – 1 tbsp
Orange juice – 1/2 cup
Nutmeg powder (Jaiphal) -1/4 teaspoon
Mustard oil
1 big onion paste
Salt to taste
Method or Process:

Wash the Koi fishes properly and smear them with turmeric powder and salt. Take a pan and heat oil, and fry the fishes thoroughly. Keep the fried fishes in a bowl. Add 2 tbsp oil to the pan and add the black cumin (Kalo jeera) and onion paste. When the onion paste is little fried add sugar, ginger paste, green chilli paste and stir it well.
Then again add Kashmiri Chilli powder, salt as per your requirement or taste, and turmeric powder. Now, add the fishes to the spices and stir well. Take 1/2 cup water and add to the contents in the pan. Cover the pan for 5 minutes.
Uncover the pan, and sprinkle the minced coriander leaves, nutmeg powder (Jaiphal), and orange juice. Cook till the gravy thickens. Serve it hot with plain rice or Jeera rice.
