Pep up your Christmas with this dry fruit cake

Hi everyone, it’s your chef Ronit back again with an amazing recipe for you all in the month of Christmas. We can smell the fragrance of baking cakes everywhere, yes you got me right let’s make an easy yet delicious Dry Nuts Fruit Cake.

Ingredients – 
Refined flour – 200 gm
Sugar powder – 200 gm
Eggs – 4 pc
Baking powder – 4 gm
Vanilla essence – 10 ml
Butter – 200gm/refined oil -200ml
Salt- a pinch
Dry fruits- 150gm(almonds,cashew,raisin,walnuts, pistachios)
Chocolate sauce – for garnish
Method:
First, preheat the oven at 200 degrees for 15 minutes.
Add butter in a bowl and make sure that it is in room temperature, in that add sugar powder and with the help of electrical beater or hand beater whisk it nicely till it gets creamy.
Then in that mixture, add eggs one by one and keep whisking nicely, then add vanilla essence and whisk again nicely.
In another bowl sieve the refined flour, add baking powder, salt and add the flour mixture in the egg mixture in batch-wise little at times and mix it slowly and gently that is called cut and fold method.
Once all the flour is added if the consistency is too thick add little milk and mix till the consistency gets a ribbon texture (nor thick nor thin), then add fine chop of dry fruits in the mixture mix it.
Then grease a cake mould or tin with little butter and dust with flour. Pour the mixture to the mould or tin, tap it once or twice so that it eventually spreads.
Put it in the preheated oven at 170 degrees for 40 minutes.
After 30 minutes check by inserting a toothpick to see it’s done from inside or not if a toothpick comes out clean then it’s done.
Once done let it rest in the oven for 10 mints than take out slowly gently de-mould it cut it into pieces garnish with chocolate sauce and serve.
