Method:

For making molded chocolates first wipe the mold thoroughly using a tissue paper to get rid of water and dust. Melt the chocolate in either a double boiler or in the microwave stirring every 10 seconds to prevent burning. Pour the

melted chocolate into the mold and swirl to coat all the sides evenly and then hold the mold upside down over a bowl to allow the excess chocolate to drip in it. Use a scraper or palette knife to scrape it clean. Place in the refrigerator to let the molds cool down and set. Prepare your filling meanwhile, the easiest being to soak cashew and raisins in rum or simply in some sugar syrup even and then nicely chopping them up. Take out your molds and fill them with the filling. Pour the remaining chocolate into the mold and tap the mold 2-3 times to get rid of any air bubbles. Let it set for about half an hour to an hour. Take out the chocolates out from the molds and eat it, gift it anything it’s a tiny bundle of sweet joy.

2nd Dish: Chocolate Truffle Balls

The next very easy dish with compound chocolate would be chocolate truffle balls. First, you need to know what a chocolate truffle is. A chocolate truffle is a mixture of chocolate and cream in the ratio of 1:1/2. Now that you know about it we move ahead to the recipe.

Method:

Melt the chocolate in a double boiler and add half part of cream to it. Remove from the double boiler set up and let it cool. Once the mixture cools down add the desired flavor to it such as orange zest, lemon zest, vanilla essence, cinnamon powder so on and so forth. After adding the flavor, take some mixture in your hands and roll to make a ball. Refrigerate the balls to allow it to set. One can choose to keep it simple this way or can choose it to roll the balls in cocoa powder, matcha powder or even cinnamon powder for flavor as well as for aesthetic appeal. Refrigerate the balls for storing.

Few precautions that need to be kept in mind are:

  • Moisture should not come in contact with the chocolate as that will result in the seizing of chocolate making it a dull mass.
  • The ratio of truffle needs to follow strictly.
  • The compound chocolate should be melted at low temperatures.

Thus, you have two very simple yet delicious basic recipes that you can alter to suit your tastes and palate. Go on, get up and start making happiness.
