When Winters call for classic sweet dish Patishapta is often remembered

Winters are the little kids who madly shriek aloud to explore all the possibilities of food available to make the winter happy. But while exploring there are some grandma’s classics like the must-have little black dress which always make us happy. One such is the very common Patishapta that is rice pancakes.

Patishapta is a special food for Poush month, i.e. mid of January, which is also a holy month for all the communities as it is the month of harvest and rice being the staple cultivation in India the Bengalis do not miss the opportunity to turn the rice in a sweet dish which may be Payesh, Pithe or Patishapta.

Chocolate Patishapta 
Ingredients:
Rice flour – 1 cup
Refined flour – 1/2 cup 
Salt – a pinch 
Cocoa powder – 4 tbsp
Sugar – 1/2cup
Water – as required 
Ghee or oil – for frying
For filling:
Milk – 1/2 cup
Condense milk – 5 tbsp
Cocoa powder – 1/2 tbsp
Dairy milk chocolate – 1/2 cup
Rice flour – 2-3 tbsp 
Method:
In a bowl add rice flour, refined flour, salt, cocoa powder, sugar, and mix all the ingredients then add water to it and make a semi-liquid batter not very thick nor very liquidy. If the batter is too thick adjust it with water. Keep it aside for sometime. 
Then for the filling, heat a pan and add milk. Boil it and add cocoa powder, sugar, and dairy milk chocolate. Mix it well once the chocolates melt and add the condense milk to thicken up or you may add milk powder as well. Cook it till it thickens and let it get cool. 
Then heat a pan, preferably a non-stick pan for better results, heat the pan and grease it with ghee. Then pour the chocolate batter with a big spoon and make it round-shaped. When it is thin and crisp on one side pour the mixture into the patishapta  and fold it and follow the process. Serve hot or chilled but garnish with chocolate syrup.
