Hemkana Payesh: a Tagore’s treat for the Goddess

Payesh or rice pudding is a famous dessert that goes well with any cuisine and any festival in India. Hemkana Payesh is s recipe from the kitchen of Tagore. Recipes that are lost or are accumulated by Tagore have always garnered special place for the food lovers.

Ingredients for Hemkana Payesh:

Milk (full fat) – 1 litre

Almonds – 20 pcs

Green cardamom – 1/2

Khoya Kheer – 100 gms

Sugar as per taste

Power milk – 100 gms

Process:

  • Soak almonds overnight. Peel the skin off, and mix khoya, powder milk finely.
  • Then make a dough from the mixture and make small balls.
  • Take a pan and heat it. Pour the full-fat milk and boil it till it reduces to half.
  • Sprinkle 1/2 tbsp cardamom in the milk.
  • Take 100 gms sugar and mix it gently. Then take the balls and drop in the liquid mixture.

Cool it and garnish it with almonds. Hemkana Payesh is ready.
