Gourd Payesh: An out of the box but mouth watery dessert

Payesh, a pudding made with milk, sugar and generally rice. But here’s presenting a unique Payesh recipe with the gourd. An out of the box dessert yet a mouth watery dish for the sweet tooth.

Preparation time: 30 minutes

Ingredients (for two people):

Gourd – 1/2

Milk – 1 ltr

Ghee

Cardamom (Elaichi) – 2 pcs

Bay leaves – 2 pcs

Cashew (Kaju)- 6 pcs

Raisin (Kismish)- 6 pcs

Sugar – 1 cup

Process:

  • Finely chop the gourd or nicely grate it with the help of a grater.
  • Wash the chopped/grated gourd thoroughly.
  • Boil the chopped/ grated gourd. When the gourd gets boiled nicely, strain the excess water with a strainer.
  • Take a pan and add ghee to it.
  • Add the boiled gourd on the pan and saute it.
  • Take a heavy bottom pan and heat the milk.
  • Add cardamom and bay leaves to it. Heat the milk has reduced to almost half.
  • When the milk thickens and turns to kheer, add the ghee-fried gourd into it.
  • After the gourd gets boiled in the milk, add the sugar, cashew and raisins to it.
  • Turn off the flame when the sugar gets completely dissolved into the Payesh. Scrape milk solids from the sides of the pan and add to Payesh.
  • Take the Payesh out and serve it in the bowl. hot and sweet.
