  • Basmati rice – ½ cup (soaked for 30 minutes)
  • Cashews – 2 tablespoons (chopped)
  • Pistachios – 2 tablespoons (chopped)
  • Almonds – 2 tablespoons (chopped)
  • Sugar – as needed
  • Ghee – 2 tablespoons

Method for cooking Khirod Nandini dessert Recipe:

  1. Heat the milk in a heavy-bottomed pan until it begins to boil.
  2. Drain the soaked basmati rice and add it to the boiling milk.
  3. Stir gently and cook on low heat, letting the rice soften completely while the milk thickens into a creamy kheer-like consistency. Stir occasionally to avoid sticking.
  4. Separately, prepare a sugar syrup (bura) by melting sugar with a little water until it forms small crystals.
  5. Once the milk and rice mixture is thick and creamy, take a half portion of the kheer and pour it into a clay pot (matir khuri). Do not add sugar to this portion.
  6. To serve Khirod Nandini in the traditional way: cover the kheer in the clay pot with a layer of the sugar crystals (bura). Sprinkle the chopped cashews, pistachios, and almonds evenly over the top.
  7. Warm the ghee until melted, then drizzle it generously over the sugar and dry fruits layer, sealing the top completely.
  8. Let it rest so the flavors meld and the sugar crust forms a delicate, crunchy topping.
